When the air fryer first burst on the scene several years ago, I was firmly in the “anti” camp. I saw it as a bulky appliance that would likely be a passing trend, and was unnecessary anyway since any oven can basically do the same thing.
And I still pretty much feel that way.
However! For certain tasks, the air fryer is absolutely brilliant - as in the case of these cabbage wedges. The crispness you can achieve in the air fryer is unparalleled and can convert even the biggest cabbage skeptics.
Why it works: air fryers compress dry, hot air into a small space, which is what facilitates faster cooking than the oven. A fan circulates the air and, thanks to the mesh basket inside, your food gets 360-degree coverage of heat, resulting in crispness on all sides.
An air fryer is also great for the warmer months, when you may want to roast, but don’t want to heat up your whole apartment with the oven.
These air fried cabbage wedges are coated in a garlic, miso, and mustard glaze, which makes them ultra-savory and caramelized.
