I’m popping in outside of regularly scheduled programming since this month’s Gazette fell on a weekend and I didn’t wanna skip our regular recipe roundup.
I don’t think I need to summarize the weather for you unless for some reason you’ve been living under a rock, or maybe on a tropical vacation (in which case hi, I’m jealous). Suffice it to say, I’ve been craving cozy, saucy, noodle-y comfort foods like never before, and it’s likely you have too.
Below, four globally-inspired warming dinner options for the week ahead…
Cauliflower Pot Pie
Tender roasted cauliflower replaces shredded chicken as the star ingredient in this savory pie. Coconut milk adds richness to the gravy, while store-bought puff pastry gives the whole thing a festive vibe.
Miso Shiitake Risotto
Traditional risotto gets its savory, nutty personality from a whole lot of grated cheese. Simmering the rice in miso broth and finishing it with nutritional yeast replicates the experience shockingly well.
Vegetarian Golubtsi (Ukrainian Cabbage Rolls)
Tomato-simmered cabbage rolls are a staple among many Eastern European cultures. My version features mushrooms and beans, plus a few atypical ingredients like soy sauce and smoked paprika to amp up the umami, for an ultra-satisfying adaptation.
Tofu Udon Soup with Kale
Slippery udon noodles, spongy tofu, and silky kale come together in a gingery mushroom broth for the ultimate dose of weeknight comfort.

Love this approach. Usingmiso broth plus nutritional yeast instead of parmesan for risotto is clever because it's not just swapping ingredients, it's actually replicating that salty-umami depth. I've found smoked paprika works wonders for adding body to vegan dishes too, so thegolubtsi combo sounds perfect.
