Tofu Cabbage Bowls with Soy-Ginger Dressing
Tofu and cabbage have both earned a permanent spot on my weekly grocery list. They’re affordable, last forever in the fridge, and there are countless ways to turn them into a meal. I consider them “insurance ingredients” because as long as they’re there, I’ll always be able to make something.
These pan-fried tofu and cabbage bowls with soy-ginger dressing have been in my weeknight dinner rotation for many years. Between the crispy tofu, crunchy veg, and savory ginger sauce, they’re super satisfying but not heavy, making them especially suitable for the warmer months. The whole thing comes together in just one pan, in around 40 minutes.
I’m always on the hunt for a great podcast and recently found The Happiness Lab. Hosted by Yale professor Dr. Laurie Santos, with fellow researchers and authors as guests, it explores everyday psychology topics in a digestible, not woo-woo way.
