Vegan Cashew Caesar Dressing
Cashew caesar dressing has been in my recipe arsenal for many, many years, and I’ve finally come to the conclusion that: it deserves its own dang recipe page.
I first encountered the concept while photographing the Compassionate Cuisine cookbook (way back in 2017!) and I’ve been making my own spin on it since.
This dressing is rich and creamy while being completely oil-free. It’s tangy, bright, and super funky (thanks to miso + capers), which is exactly what we all love about the traditional version. Particularly beloved at dinner parties and holidays at my house, the vegan caesar salad is always the first platter to be emptied.
Oh, and I’ve included instrux for how to make those super crunchy breadcrumbs that take caesar to the next level, too.
We’ve had a handful of rainy days here lately so I got to cross a few movies I’ve been meaning to watch off my list and Griffin in Summer (2024) was a standout. This coming-of-age comedy follows a 14-year-old playwright as he produces a very adult play in his suburban hometown. It’s full of the kind of cringey moments that make up our teenage years, and I was definitely sobbing by the end. (Streaming on Hulu)
