Hi Virginia. Totally! Just cook the aromatics with a bit of water (the oil-free technique) instead and follow the recipe as written. Like I mentioned, the healthful compounds in turmeric are fat-soluble though, so be sure to add some other fat to reap all the benefits - maybe some toasted cashews as a garnish :)
Can I do this in a nonstick pan without oil - oil is not on my diet anymore.
