Hi friends,
Easter is one of my favorite holidays. I mean, it’s not Thanksgiving-level favorite, but it’s up there! Not only does the day feel like a celebration of spring, but it’s also pleasantly low-stakes. There are no gifts and few rules, and thus less stress than some other holidays.
Whether you’re planning a brunch or dinner menu, I’ve compiled some of my favorite festive recipes for the occasion below…
Asparagus-Leek Puff Pastry Tart
Sweet sautéed leeks and snappy asparagus, plus a rich miso-walnut spread, are baked into a store-bought puff pastry crust. Sounds sophisticated but it’s actually quite simple to make.
Maple Roasted Carrots with Tahini
I’m not sure how carrots became the hallmark vegetable of Easter, but here we are. These maple-roasted beauties are coated in a Moroccan-inspired spice blend that contrasts perfectly with the creamy sauce.
White Spinach-Mushroom Lasagna
This rich lasagna with cashew béchamel is a labor of love, but totally worth it.
Chickpea Flour “Frittata” with Tomatoes and Spinach
Whether you don’t eat eggs or are just avoiding them for now ($$), you’ll be glad to know chickpea flour makes a great stand-in in this frittata. (Pair it with this arugula avocado salad.)
Cast Iron Skillet Asparagus with Caper Relish
A cast iron skillet is, hands-down, the best way to cook asparagus spears. You get charred, flavorful outsides with plenty of crunch remaining inside. (Nothing is worse than mushy, overcooked asparagus!)

Definitely not quick and easy, but a fun kitchen project to tackle as a group for the holiday weekend.
Sweet Potato Waffles
Custardy on the inside and crackly on the outside, these are simply the best waffles I’ve ever tried.
