Happy Sunday and welcome back to The Weekly 5, my round-up of recipe ideas for the coming week.
Roughly half of the emails I sent out this week came back with “Out of Office” autoresponders. This tells me a lot of people are vacationing right now, making it likely you’re OOO, too.
As I was brainstorming this newsletter, I got to thinking about vacation rental cooking (i.e. things you can make in a rental property’s kitchen that more likely than not has crappy dull knives and barebones equipment).
For me, vacation rental cooking has to be unfussy, but big on flavor and crowdpleasing. Below, 5 recipes you can make in even the most primitive Airbnb…
1. Herbed Potato Salad
A cup of fresh dill > a cup of Hellman’s. Subbing mayo with a ton of herbs, capers, and a tangy vinaigrette in potato salad is the hill I’m willing to die on.
2. Easy Tempeh Tacos
Crumbled tempeh simmered in tomato sauce and spices is an easy and hearty filling for meatless tacos. (Purple cabbage slaw makes an awesome taco topping, btw).
3. Tater Tot Nacho “Salad”
Frozen tater tots may not be the healthiest thing in the world, but topped with beans, guac, lettuce, and pico de gallo? They get my stamp of approval. (Don’t wanna deal with the oven? Make plantain nachos instead.)
4. Pesto Rice Salad
Think of this one-bowl meal as an alternative to pasta salad, or an extremely lazy summer risotto.
5. Tomato Chickpea Pasta
This hearty pasta is made exclusively with pantry staples and can easily feed an army… or at least 4-6 tired beach-goers.
